dc.description.abstract | Objetivo: evaluar la eficacia microbiológica del ceviche de pota expendidos en los puntos ambulantes del Centro Comercial de Gamarra.
Materiales y métodos: la presente investigación tiene un enfoque cuantitativo, de diseño no experimental de tipo transversal con alcance analítico y descriptivo. Para la recolección de datos se utilizó la técnica observacional. Para el análisis de la muestra se utilizó la técnica (NMP). Para cuantificar la presencia de coliformes totales se realizó diluciones seriadas, se utilizó 0.8mL de muestra más 7.2mL de caldo BRILA. Para la identificación de E. coli y Klebsiella spp. se utilizó Agar EMB y para Salmonella spp. y Shigella spp. Agar SS.
Resultados: se determinó que 15 muestras de ceviche de pota obtenidas del Centro Comercial Gamarra estuvieron contaminadas por microorganismos de tipo coliformes totales; hallándose cantidades de hasta 880 NMP de coliformes por 0.8mL de muestra. Por otro lado, 14 puestos presentaron una alta contaminación por microorganismos como E. coli, Klebsiella spp., Salmonella spp. y Shigella spp.
Conclusiones: los ceviches de pota expendidos de forma ambulatoria en el centro comercial Gamarra no son aptas para el consumo humano por no cumplir con los criterios mínimos calidad microbiológica según indica el Manual de Análisis Microbiológicos de Alimentos y la Norma Técnica Sanitaria Peruana. | es_PE |

Materials and Methods: the present study employed a quantitative approach, using a non-experimental cross- sectional design with analytical and descriptive scope. Observational techniques were used for data collection. NMP technique was applied for sample analysis. Serial dilutions were performed to quantify total coliforms, using
0.8 mL of sample plus 7.2 mL of BRILA broth. E. coli and Klebsiella spp. were identified using EMB Agar, and Salmonella spp. and Shigella spp. were identified using SS Agar.
Results: it was determined that 15 samples of squid ceviche obtained from the Gamarra Shopping Center were contaminated with total coliform microorganisms, with counts of up to 880 MPN of coliforms per 0.8 mL of sample. Additionally, 14 vendors showed high contamination by microorganisms such as E. coli, Klebsiella spp., Salmonella spp., and Shigella spp.
Conclusions: the squid ceviche sold ambulatory-style at the Gamarra Shopping Center are not suitable for human consumption as they do not meet the minimum microbiological quality standards according to the food microbiological analysis manual and Peruvian technical health standards. | es_PE |
